Method
In a bowl, mix the Diamond Barley with the ½ cup of cold water to make a smooth, lump-free paste.
Bring the 3 cups of water to a boil in a saucepan.
Lower the heat and slowly pour in the barley paste, stirring all the time so no lumps form.
Simmer for 5–7 minutes, stirring often, until the liquid turns slightly thick and translucent.
Take it off the heat and let it cool completely.
Stir in the lemon juice, honey (or sugar/jaggery) and black salt. Taste and adjust.
Serve chilled or at room temperature, with a few mint leaves.
Barley water is an old favourite for hot days. With FIBO Diamond Barley it takes just a few minutes and a single pan.
Tips
- Always make the paste first with cold water. Adding the barley straight to hot water makes lumps.
- Add honey only after cooling. If you use honey, stir it in once the drink is no longer hot.
- Storage: keep it covered in the fridge and drink it within a day. Stir before serving, as it settles.
Variations
- Plain barley water: skip the lemon and sweetener for a mild, simple drink.
- Warm barley drink: on cooler days, serve it warm with a pinch of salt instead of lemon and honey.
